Pad Thai Recipe (Option: Vegetarian)

In this blog post, I'll share my own pad thai recipe with you, that I continuously use and love. The amount of ingredients used in this recipe will give you a serving for around 4 people or more, depending on how big of an eater you are.
The ingredients that you will need are:
- 2 eggs
- Noodles of choice (250 grams)
- veggies of choice
- Cane sugar
- Soy sauce
- Tamarinde (dressing)
- Coconut milk (250 ml)
- 1 Lime
- (Wok) oil.
- (Chicken or scampi)
You can make this dish the way you want to; If you are a vegetarian you leave out the chicken or scampi, if you don't like coconut milk you can leave it out as well and you can choose whatever vegetables you like. I like to buy a pack of pre-mixed wok-vegetables that include mushrooms, red union, paksoi, leeks and yellow carrot, this package is 400 grams but I advice to use one and a half pack to have a good balance of noodles and veggies. I use tamarinde dressing but you can also use normal tamarinde if you like. Lastly, I prefer to use wok oil instead of regular oil as it gives a bit more taste.

Let's start cooking
Step 1:
Start to boil water with some salt to make sure the noodles are ready to go when we need them to. Noodles tend to stick really fast so I prefer to have them boiled and ready to be thrown into the wok pan with the other ingredients at the right time.
Step 2:
Make the sauce by adding the following ingredients into a seperate bowl:
- 3 tablespoons of soy sauce
- 2 tablespoons of tamarinde
- 1 tablespoon of cane sugar
- 1/2 lemon squeezed
Step 3:
Start boiling the noodles and cooking the veggies in a seperate wok pan in the oil, at the same time.
Step 4:
When the vegetables and noodles are ready, add them together and immediately add the pre-made sauce. Stir everything to make sure the noodles soak in all the sauce.
Step 5:
Add the coconut milk and stir everything again.
Step 6:
Break both eggs on top of everything and stir again so that the egg is equally divided over the entire pan.
Step 7:
Squeeze the other half of the lemon over the dish and add some salt and pepper to give it some taste.
(You can season the dish the way you prefer it but I do not like my dish to be spicy that is why I stick to only pepper and salt.)
You're ready to serve now and make your tummy happy. This entire recipe takes about 10 to 15 minutes, it is delicious and easy.
