Recipe: Zucchini rolls filled with ricotta and spinash

Today's recipe is one that I tried out for the first time, last week. Everyone loved it so I thought it would be a good thing to share this one with you too. I made Zucchini rolls filled with Ricotta cheese and Spinash with some tomato sauce.

The ingredients that you will need are:

- 1 Zucchini

- 400 gr of Spinash

- 250 gr of Ricotta

- 600 gr of tomato sauce

- Cherry tomatoes (if preffered)

- Extra Virgine olive oil


For the tomato sauce you can choose whatever sauce you prefer, I went for one and a half bottle of tomato sauce with a bit of basil in it. You can also adapt the amount of tomato sauce to your own preference, but personally I think for the amount of rolls I made (10), that 600 grams of sauce was perfect.


Let's start cooking

Step 1:

Pre-heat your oven at a temperature of 160°C.


Step 2:

Wash and slice the Zucchini in thin slices of about 1 to 2 mm. This is easier whenever you have a Mandolin at your disposal or a cheese slicer. Spread all your slices on plates or cutting boards to fill them up later.

Step 3:

Grease an oven pan with some butter or oil and put your tomato sauce in it. If you preffer, you can add some cherry tomatoes to your sauce.

Step 4:

Start cooking your spinash in a big pan with a bit of oil. Don't put all the spinash in the pan all at once, but take small amounts every time to speed up the process. When the spinash has shrunk, put it in a sieve to get rid of all the oil.

Step 5:

Let the pan cool down for a bit and then add the Ricotta and Spinash together to make your filling.

Step 6:

Take your Ricotta mixture and start spreading it over the Zucchini slices.

Step 7:

Roll up the Zucchini in tiny rolls and place them in the tomato sauce.

(Tip: I used small tooth picks to keep the rolls from falling apart, once the rolls are plated you can take them out and they will stay together.)

Step 8:

Take any leftovers of your mixture and put it on top of the rolls.


Step 9:

Put your oven pan in the oven for about 10 min.


You're ready to serve your creation now! I found, that whenever you feel like the zucchini is still a bit to hard, put it in the microwave for about 1,5 minute and it will soften.

I really loved this dish, it was light, healthy, vegetarian and easy to make. Another tip that I want to mention for the not-so-small-eaters among us; this dish is pretty light so if you like bigger meals, try making a double portion or add some potatoes on the side.
